Place the sliced apple in a small pan with 1/4 cup water and simmer for 5-8 minutes until soft; then puree in a food processor or blender to make an apple sauce. Line a baking tray with baking paper; then gently roll the mixture into balls and pat down flat before placing on the tray to make 6 cookies. The mixture is sticky, that’s normal. Bake for 30 minutes until brown, remove and allow to cool on a wire rack before eating. These are meant to be a soft moist cookie, not a crunchy one.
